This unique presentation describing the cooking of vegetables in myriad ways is the result of over fifty years of expertise in the kitchen. Every recipe has been tried, tasted and hailed by discerning gourmets. Arranged alphabetically, every chapter contains a number of recipes for cooking the concerned vegetables. The recipes reflect the differing tastes, the different edible oils used, and the characteristic flavours of all the regions of India, besides some of the foreign lands. Each chapter begins with a brief note on the general nutritional value and the inherent medicinal properties of a particular vegetable. Though not quantified, the reader is enlightened about the overall contribution that the vegetable makes towards healthy living—particularly through old, time-tested recipes of grandmothers for coping with minor ailments. All over the world, presently, there is a growing awareness of the beneficial effects of a vegetarian diet. Unfortunately, there is a widespread, but erroneous, impression that a vegetarian diet is inferior. The recipes in this book, about 300 of them, would dispel such notions, by appealing to the palate, and nourish the body. When good cooking and experience are bound in unison, the result is a magnificent display of mouth-watering recipes. For 65-year-old Vasantha Moorthy, the art of cooking came naturally as she spent hours, from her teenage years, learning, experimenting and finally perfecting the skills. After her graduation from Maharani’s College, Bangalore, she was married to an Indian Railways Officer. This gave her further opportunity to travel widely and gain exposure to various types of cuisine all over the country. Given the required encouragement by family and friends, her talent turned to writing and she compiled her first book The Vegetarian menu book (UBSPD) which is now in its third reprint. The books presents a variety of selective, ready-to-serve menus along with the recipes. Presently living in Bangalore, Vasantha Moorthy’s successful venture has her planning a whole series of easy-to-refer cookbooks with the tastiest preparations!
