This book is a sequel to the pleasures of vegetarian cooking and the delights of vegetarian cooking. The emphasis, as in my earlier books, is on simple, quick and relatively economical dishes. To make it easier for beginners and to facilitate reproducibility, the procedures are given stepwise in simple language and using a minimum of technical culinary terms. As usual, with a view to making the book self-contained, all the basic recipes referred to in individual recipes are reproduced in the last section by way of ready reference.
