Synopsis The work at hand concerning hotel education, among several books published in India, claims to be the most comprehensive. This book has been designed so as to make the students, scholars and teachers informed of the basic fundamental concepts and environmental concepts of hotel education. The book presents a very systematic presentation of the subject-matter in simple and lucid language drawing examples from the Indian Hotel Industry and thus the book contains point analysis and description of the subject in Indian context and covers the syllabi of all the institutes of hotel management and Indian universities on the subject. The book in all contains twenty-two chapters and is divided into two parts. Part I contains 16 chapters which are devoted to basic and fundamental concepts such as glossary of hotel terminology, hotel industry and tourism, growth and development of hotel industry in India, the global scenario, regulatory conditions of hotel industry, feasibility determination of hotel projects, moral and statutory obligations of hotels, human resource management in hotels, front office management, sound and healthy hotel environment, safety security in hotels, department of food and beverage in hotels, the art of cooking, styles of food service and upkeeping of hotels. The contents of this part of the book make it clear that there are some aspects of hotel education which are not found in any other book, written by Indian authors, on the subject and thus its claim to be a unique book on the subject is justified. Part II of this book deals with environmental concepts of hotel education or say hotel industry. To the best of my knowledge and belief none of the Indian publication on the subject contains this aspect of hotel education. The concept of environmental hotel management has been developed, primarily, in UK which has benefited the hotel industry, hence, the concept of environmental hotel education is gaining acceptance in most developing hotel establishments and nations of the world.
